Spas ( Armenian: Սպաս) is a matzoon-based soup. [1] [2] It is a traditional dish in Armenia. [1] [2] Besides matzoon, the main ingredient are herbs, and hulled wheat berries (i.e. with husks removed).
Flour, and an egg or egg yolk is included, to prevent the matzoon from curdling. [3] Herbs, such as coriander, thyme, parsley, and sometimes mint, are added as well. Butter and regular onions, or fried onions are also often added to the soup for a richer taste. It can also be served with meatballs. [4] [5]
Traditionally there are 3 major variations. The first variation uses rice instead of wheat berries , the second uses bulgur instead of wheat berries, and the third uses barley instead of wheat berries. [4]
This soup is traditionally served warm in the winter and chilled in the summer. [1] [2]
