I have started a page for Enzymatic Interesterification, and have included information about the process, history, and chemistry. This page only touches the surface so it would be great if anyone had additional information or references they wish to add. I will try and add content to it going forward as well. This is my first page and I have tried to format it correctly but let me know if there need to be changes.

Srednuas Lenoroc: I reckon it's supposed to be "-1 and -3 glycerides", but I can't be sure, if that were true, it would mean that
User:Teledork overlooked this typo when uploading it, and it was overlooked again in the creation of this article. I'm not an expert in this field. A Google search for "d-3 glyceride" does not give meaningful results, though. --
