The article needed a substantial rewrite. I've added an explanation of what grillades are, and what grillades and grits (as near as I can tell, the most popular grillades recipe) are. The article seems to me to no longer be stub class, so I've removed those classifications.
I've also changed the pronunciation: /ɡrɨˈlɑːdz/ may be proper French, but /ɡree-yahds/ is how the name of the dish is pronounced in Creole country. I don't feel competent to render it in IPA; I'd appreciate it if someone who did would add an IPA pronunciation. Sam Paris ( talk) 18:56, 19 June 2014 (UTC)
