Shouldn't this include soy milk, almond milk, coconut milk, and the like?

Not unless it's renamed, as those things aren't "substitutes" for dairy milk across at least half of the globe. (Also, see below.) --

Not "substitutes" (for dairy milk)
What, if any, evidence is there that Amazake, Douzhi, Horchata, Kokkoh, Poi, or Sikhye actually qualify as "substitutes" for dairy milk? If none, this template needs to be renamed something like "Analogues for dairy milk" or perhaps "Milk analogues".--
