About a week after the event, and media coverage, commentary and opinion pieces continue. More media coverage of taco trucks used as protests/voter registration drives/promotions/etc. I am heavily leaning towards moving this to mainspace soon, with the full expectation that someone will send it to AFD (based on WP:TOOSOON would not be suprising). However the amount and variety of coverage from independent reliable sources about the event and aftermaths also have me heavily leaning towards this topic reaching the criteria for Wikipedia:Notability (events), not to mention a very clear pass of WP:GNG. -- 1Wiki8...........................
