Hi! Do not know how to post my comment differently. Sorry about that. I changed 'pumpkin' in 'squash' in the 'tortelli di zucca' (Lombardia section). I am Italian (form ferrara where we have a similiar dish) and live in US. Italian word 'Zucca' corresponds to three different vegetables in US: pumpkin (the big ones used for Halloween and for pumpkin pies, it taste of nothing...), squash (tastier, the delicata and butternut are excellent to make italian recipes), gurds (only decoratives). For now this is little more than a growing category of italian foods. Once the list contains sufficient verbage, it can be rewritten to be a more thorough prosaic article. cheers -- Leon
I browsed through the page and looks to me as a big disaster. I just made a spot check and I found a lot of mistakes and bad editing. There should be rules and users should refrain from tampering with subjects they don't have experience about. If you have been in vacation on the lake Como and ate crispy focaccia, don't correct the page to suggest that: Maybe around the corner they do a soft focaccia. If in Croatia they do something similar to "prosciutto" don't add it to the page, otherwise we should add about the French jambon or the jamon Iberico. In addition there is a list of recipes, mainly seafood, that is pure nonsense. What I want to say is, food is part of a culture and if you are born in another country probably your vision is distorted. For example there are deep differences between the Italian cooking and the Italian-American one. In conclusion, editing this page looks like an almost desperate task. Not only. Most of the recipe titles don't make any sense. Looks like somebody copied the index of some sort of italian fish cookbook and not even a good one. I will purge the list in the next few days leaving only the titles for traditoonal recipes and maybe add few ones. Then the next task would be to add the descriptions and/or recipes. -- pietro
I think this list is WAY TOO LONG. This list should just have the basic and notable Italian dishes that are significant enough to be listed here. Honestly, not every dish known to be served in any Italian restaurant needs to be listed here. This article could really use some cleaning up as well as some translation. I did some cleaning. Deleted: 1. Spring soup (There is no such a thing in Italian cooking), 2. of rice and celery, after the minestrone link, 3. Condiments for seasoning minestrone, it was a repetition of the minestrone link. 4. Minestrone of rice and cabbage & Minestrone alla Cappuccina. They are not traditional Italian dishes. I changed Tuscan Soup into Beans Soup, and I will add information later.
I suggest the recipes from -The Cook's Decameron: A Study In Taste etc- be moved to a different location. They don’t make any sense here.
I think Italian sauces should be a different category separated from soups.
I aslo cleaned the fish list. There is more work needed. -- pietro

Recently someone suggested that this article be merged back into Italian cuisine. A while ago a consensus was reached that this section be merged OUT of Italian cuisine, due to its extreme length, and little specific information about Italian cuisine. I came to wikipedia looking for what I would call Italian bread. When I used firefox to look for 'Italian bread wikipedia' it brought me to garlic bread. That article brought me here. But what is the typical Italian bread that I see in the US called? Like this: http://sydfish.files.wordpress.com/2007/11/italian_bread_500.jpg or http://www.nps.k12.nj.us/science/philipe_chem/italianbread.jpg There should be SOME sort of mention of this kind of 'Italian bread' somewhere. This page probably breaks WP:NOTDIRECTORY, being an indiscriminate list of the names of just about anything anybody has every cooked or cooked with in Italy.
