It's true that "à la mode" means "fashionable". But "à la mode de chez nous" means "the way we do it at home", and "à la mode de Paris" would mean "the way they do it in Paris". Given that this is just braised cheap meat, it doesn't seem plausible that it means "fashionale"; it seems more likely that it means "the way everyone does it".

Indeed, "à la mode" is linked; the target confirms that the phrase means "fashionable", but notes that in cuisine, it means instead "cooked with carrots and onions".

So I'm going to mark it as needing citation; but I'll delete it soon.
