I don't know any italian, but there are probably a ton of sources for more info to expand; maybe even a few I've overlooked in English. If anyone can find a good source mentioning the time that folks made the acqua pazza, feel free to edit or drop the info in my talk -- I'm sure it was until the price of wine went down, if that helps...
