This class will explore both the history and science of beer and brewing through lectures, readings, and lab work. The topics to be covered include: the cultural history of beer, the biology of yeast, basic enzymology, fermentative metabolism and intricacies of brewing beer. Students will brew different brew styles throughout the semester.
