Hi! I have some feedback on your potential topics:
Out of all of them I do have to say that the gender bias article will be the easiest to edit, followed by the sexism and health care in the US articles. Now since these articles are more medicine specific, it's very important to pay attention to the sourcing guidelines for medicine and health related articles unless you're editing on something such as the history of the given topic. Essentially, if you're discussing the topic as it applies to history or society then it's unlikely to need to follow those specific guidelines exactly, however if you're discussing things like treatment, that should use the medical sourcing guidelines.
