Don't really mind as long as both names are mentioned in the lead. A Google search for both names in English articles shows István and Stephen to be pretty equally used.

The standard of the Catholic Church, from which the
MOS:SAINTS convention comes from, is that the names are written in the from of the language being spoken. --

I must admit even the English-speaking Jesuits refer to him as Stephen. It's in line with
WP:COMMONNAME and English Google search results for Stephen Pongracz are more than double Istvan Pongracz.
