Sausage

Except that this is the English language Wikipedia, where we name articles in English. In English, saucisson is a military engineering term. If you want to write an article on French sausage making, (or rather, expand the Sausage#France section), that would be an excellent thing, but the appropriate article title would be something like French sausage or Sausage-making in France.
