Asilvering. Hope you are well. I have just a few points, including two small changes I've already done.
I think, per
MOS:JOBTITLES, that "bishop of Orléans" should be capitalised as it always references
Félix Dupanloup in his official capacity, though not in the generic sense when it is only "the bishop laughed". I have an open mind on this, however. What do you think?

Valais as a canton only. I agree that countries like Switzerland should not be linked.
I amended the quotation in the last years section. The reference is normally placed after the colon to precede the blockquote; and in this case it applies to both sentences.
And that is it. This is unquestionably a good article and it passes the review. The man was a culinary genius and I've got an appetite now, after reading the article. I'll do the necessary at
WP:GA. Well done and all the best.
