The notability of this subject is not clear from the article nor the few reference provided. The claim of "the cow became a charismatic figurehead of animal rights and a meat-free diet." is very grandiose and is not supported by references to reliable 3rd party sources.
The references provided have a very specific point of view and this article reads like a promotion of that point of view. One reference (counterpunch) is a blog which does not appear to meet the guidelines for reliable sources, another (Spirit of Change) is an alternative health magazine which has a very POV-ish approach to the subject, the third is a web based database of roadside curiosities. Some coverage of this subject in media not solely focused on the vegetarianism related subjects would go a long way to establish notability of this topic.
