Hello A Guy into Books -- You make two arguments for the notability of this subject: (1) That it is like Harrods, and (2) that there exist good references that have not yet been put into the article. As to the first, I cannot comment. As to the second, I find that a common and weak argument as to why an article should not be deleted.
A subject company or shop does not inherit notability from its subsidiaries, shareholders, or its products. I interpret that in the context of an art gallery as follows: Simply selling notable works does not make the gallery notable. If one can demonstrate that the gallery regularly discovers unknown artists, promotes them, and makes them successful, then it, the gallery is notable. Insofar as St Ives specializes in Modern British and Contemporary Art, it should be doing just that. WP:GNG is a guideline, a suggestion that needs to be interpreted in the context of the situation.
