According to the definition of the British Pie Association and the Chairman of the British Pie Awards (Matthew O’Callaghan) the definition of a pie is "a filling totally encased in pastry". The American use of "pie" referring to open-topped flans, tarts and even pizza is a colloquial derivation and should be classified in a new page entitled "Pie (American English)", if so desired.
