Literary Arabic began in the 5th century AD, Classical Greek ended in 323BC. So without sources saying Arabic influenced Classical Greek is really out there. The Latin connection also seems suspect. Classical Latin was ending when Arabic Literature began.

And if you don't want Norman that's fine, but technically speaking there were Orthodox Crusaders during the first Crusade, specifically in Anatolia, but some also active in the levant making Catholic wrong
