Felix cheese is an artisan blue cheese, made with unpasteurized cow milk. [1] The cheese must be aged for a minimum of 60 days, it has a dense, fudgy texture. [2] It is very similar to Amablu except for the fact that it develops a natural rind that picks up microflora found in the caves. [3] It is produced by the Caves of Fairbault an artisan cheese company, located in Southern Minnesota. The cheese is aged in a number of man-made and natural sandstone caves. The cheese is made raw milk that is locally produced and tested to insure quality and safety. The unique geological characteristics of the sandstone contribute to the aroma and flavor of the cheese. It was named after the founder of the Caves of Fairbault. [4]
